Simple Shortbread cookie recipe

So this is a really simple shortbread cookie recipe that I picked up and have been making a lot lately. My husband really likes shortbread and I needed to make sure I was sending the guys home with goodies for crawling around on my roof a few weeks ago.

4 c. all purpouse flour
1/2 t. baking powder
3/4 t. salt
1 lb. butter (room tempature)
1 c. powdered sugar
1/2 t. vanilla extract
1 vanilla bean (optional)

Preheat oven to 350 degrees sift the flour baking powder and salt into a medium bowl and set aside.

In a mixing bowl beat the butter until light and fluffy. Add the powdered sugar and beat again scrapind down the sides of the mixing bowl as you are mixing. Beat in the vanilla extract. If you have a vanilla bean slit it open aling its entire length, scrape out the vanilla bean paste from the interior of the bean, and add this to the mixer as well. Add the flour mixture in two additions. Stir until everything comes together into a thick dough.

Turn the dough out onto a countertop and divede into two pieces, ths there quite a bit of dough so cutting it into two pieces just makes it easier to roll on later on. Press each peice of dough out intoa flat patty an inch thick. wrap each piece in plastic and chill completely in the refrigerator - about thirty minutes.

When the dough is chilled, use a rolling pin to roll the dough out 1/4 -1/2 inch thick. Cut the dough into desired shapes using cookie cutters or a knife and place on a parchment (or silpat) lined baking sheet. Bake for 7-10 minutes or until the bottoms of the cookies are just golden.



That's all I have for you today, I showed up at the theater lastnight and was asked "what are you doing here" and when I said I thought we were blocking act 1 scene 3 was told no act 2 scene 3 is tonight so I scramed out of there as fast as I could, I figure I should take it while I can.
